Summer Mango Coconut Porridge

Summer Mango Coconut Porridge 
1/2 cup rolled oats 
1/2 cup almond-coconut milk 
6oz vanilla Greek yogurt 
1 peach, diced
1 mango, diced 
2 tbsp dried coconut 
1 tsp cinnamon 

Divide oats, almond-coconut milk, Greek yogurt, and diced peaches between two 8oz jars. Top with a sprinkle of cinnamon and mix thoroughly. Refrigerate overnight. The next morning, toast coconut in skillet until slightly browned and fragrant. Set aside to cool and remove jars from refrigerator. Top with mango and toasted coconut.
