Cranberry Apple Oatmeal Bake


Cranberry Apple Oatmeal Bake 
serves 6

2 cups rolled oats 
1/2 cup walnuts 
1/3 cup brown sugar 
3 tbsp. flaxseed 
1 tsp baking powder 
1 1/2 tsp cinnamon 
1/2 tsp sea salt 
3/4 cup cranberries 
2 ripe bananas, sliced 
1 large apple, peeled cored & chopped 
1 egg 
1 1/2 tbsp butter, melted 
2 tsp vanilla 
2 cups almond milk 

Preheat oven to 375 degrees. Combine oats, half the walnuts, brown sugar, flax seed, baking powder, cinnamon & sea salt. In another bowl combine the almond milk, egg, butter & vanilla-whisk until smooth. Line the bottom of small individual oven-safe dishes with the banana slices. Scatter half of the chopped apple & cranberries over the banana slices. Sprinkle next with the oat mixture, then pour the almond milk mixture evenly on top until the oat mixture is wet. Top with the remaining fruit, walnuts & sprinkle with cinnamon. Bake 30–40 minutes until golden, and the mixture has set. When the bowls have cooled, top with milk, or cream.
