Double Blueberry Oatmeal


Double Blueberry Oatmeal
serves 2 

1 cup quick oats 
2 cups water 
1 cinnamon stick 
1 cup of blueberries
1 1/2 tsp corn starch 
1/2 tsp ginger 
1/2 tsp cinnamon 
Spoonful of blueberry honey 

Cook oats. Place blueberries, cinnamon stick and a tsp of water in a sauce pan over medium heat, use the back end of a wooden spoon to burst the berries as they heat-then add the ginger & cinnamon. Remove from heat, start stirring in corn starch, 1/2 tsp at a time (making sure that each addition is thoroughly mixed into the blueberries). Spoon oats into 2 bowls, use a spoon to make a well in the center and fill with the blueberry sauce. Drizzle each bowl with blueberry honey.
