Toasted Buckwheat + Pomegranate Breakfast Bowl


In the spirit of cleansing, my favorite meal of the day, and starting this year off on a healthy note we have a toasted buckwheat breakfast bowl for you. We're cooking in the super healthy genre for the Free People blog this month, and it was a nice little push for us to start January off with some simple recipes.

We made this a couple of weekends ago, when both of us craved a refresh after straying very, very far from our nutritional routine while on vacation. My favorite thing about this is how vibrant the colors are. It's easy to want something healthy when it's beautiful. This is also the perfect candidate for an on-the-go breakfast, being easily turned into a mason jar parfait. 

Toasted Buckwheat and Pomegranate Breakfast Bowl
serves one

1/2 cup greek yogurt
1 tbs honey
2 tbs pomegranate seeds
2 tbs cinnamon toasted buckwheat (recipe to follow)
1 tsp bee pollen

In a large bowl, spread greek yogurt in a thin layer. Top with pomegranate seeds, buckwheat and bee pollen. Drizzle honey on top and serve.

Cinnamon Toasted Buckwheat
1/4 cup buckwheat groats
1/2 tbs butter
1/2 tbs cinnamon

In a nonstick skillet over medium heat, melt butter. Add buckwheat groats and cinnamon and toast, stirring constantly to prevent groats from burning, about 4 minutes.
