Blueberry Walnut Granola

It feels like the monday after a long weekend of carefree partying. Or more accurately, the wednesday after a week in one of the most beautiful places I've ever visited. My body seems to still on Paris time, and there will be many photos + stories once we get back into our groove at home. Paris was inspiring in a lot of ways, but I think most of all it reinvigorated our love of cooking, and our love of food.  

Better Happier was feeling a little neglected while we were on our Parisian adventure so voila! Here is a new granola recipe. We made this for the first time a few weeks ago, and have been hooked ever since. I like to have a running supply of homemade granola, but I think this one will be hard to keep up with now that it's my current favorite snack.

Winter Fig + Vanilla Spiced Cereal
Poached Pears with Walnut Granola

Blueberry Walnut Granola
2.5 cups rolled oats
1 cup chopped walnuts
1/2 cup slivered almonds
1/3 cup dried blueberries
1/4 cup light brown sugar
2 tsp cinnamon
1 tsp sea salt
1/2 cup unsweetened applesauce
1/4 cup rice syrup
1/4 cup honey
2 tbs walnut oil

Preheat oven to 300°. In a small saucepan over low heat, stir to combine the applesauce, rice syrup, honey, and walnut oil. As mixture is warming, combine oats, walnuts, almonds, brown sugar, cinnamon, and salt in a large bowl. Mix the contents of the saucepan into the dry ingredients thoroughly until well combined. Spread evenly on a well-oiled baking sheet, and bake for 40 minutes, stirring every 10 minutes. Add the dried blueberries to the mixture and stir to combine. Bake for an additional 10 minutes. Remove from oven and cool completely.
