Chilled Strawberry Oatmeal with Toasted Almonds + Honey Yogurt




It's been hot and muggy, and that means oatmeal is the last thing on my mind.  Even so, with strawberries in abundance we thought it was time to take a stab at a new breakfast recipe.  This one takes a bit of planning ahead, perfect if you're having a low-key, staying in kind of weekend.

Last Summer Robert came up with a Mango Coconut Porridge that turned out to be the perfect solution to warm weather oatmeal cravings.  These overnight strawberry oats are similar in texture and not too sweet.  The recipe can be adjusted for sweetness to your liking, and a generous amount of fresh strawberries on top is a must.

Chilled Strawberry Oatmeal
overnight oats
1 cup rolled oats
1/2 cup steel cut oats
1 cup milk
1/4 cup greek yogurt
1 tablespoon honey
1/2 cup strawberry purée
1/2 cup diced strawberries
1 tablespoon sugar

strawberry topping
6 large strawberries, sliced
1/2 teaspoon ginger
1 teaspon sugar

honey yogurt topping
1/2 cup greek yogurt
1 tablespoon honey
Sliced almonds, lightly toasted

Toss 1/2 cup diced strawberries with tablespoon of sugar and set aside. Hull and purée approximately 6 strawberries (should result in 1/2 cup purée).  Combine oats, milk, honey, greek yogurt, diced strawberries and puree and cover overnight in refrigerator, up to 12 hours.  Slice 6 large strawberries, toss to combine with ginger and sugar, refrigerate for minimum 1 hour before using.  Mix greek yogurt and honey.  Lightly toast the almonds in a skillet over low-medium heat.  To assemble, fill each bowl with oat mixture and generously top with yogurt, strawberries, and almonds.  Serve immediately.
