Flourless Chocolate Cake


Flourless Chocolate Cake
4 ounces bittersweet chocolate
1 stick unsalted butter, room temperature
1/2 cup sugar
3 eggs
1/2 cup unsweetened cocoa powder
Powdered sugar for sprinkling 

Preheat oven to 375°.  Prepare an 8-inch round baking pan with cooking spray and a round of wax paper lining the bottom.  Trim any excess paper that rides up the side of the pan. Chop the chocolate into small pieces and set aside momentarily.  Prepare a double boiler, or a small metal bowl set over a saucepan with simmering water and melt the chocolate, butter and sugar together, stirring until combined.  Remove from heat and whisk in eggs.  Sift the cocoa powder over the chocolate mixture, stirring to combine.  Pour the batter into the pan and spread evenly.  Bake for 25 minutes, until the edges are browned and it's baked all the way through.
