Pumpkin Chocolate Skillet Cake


Pumpkin Chocolate Skillet Cake
1/2 cup vegan butter 
1/2 cup brown sugar 
3 tbsp sugar 
1 egg 
1/2 cup pumpkin puree
3 tsp vanilla 
1 1/2 cups whole wheat flour 
2 tsp pumpkin pie spice 
1/2 tsp baking soda 
1/4 tsp salt 
1 cup dark chocolate pieces

Measure all ingredients ahead of time.  Combine flour, soda, salt, and pumpkin pie spice and set aside.  On stove place 12 inch cast iron skillet on medium heat, turn to medium-low before cooking.  Add vegan butter and stir until melted.  Once butter has melted stir in sugar.  Add the egg, vanilla, pumpkin and remaining dry ingredients. Stir together until well mixed.  Turn off heat, and add in chocolate pieces.   Place skillet in preheated oven and bake for about 15 minutes, or until the edges are getting firm.  Do not over-bake, as the center should still feel a bit moist when it's finished.  Serve warm with a scoop of pumpkin ice cream.
