Parfait in a Jar
Sometimes the best weekends are the ones where you're allowed to take things slowly, with no obligations or necessities to take care of. These are the kind of weekends where breakfast doesn't need to follow a schedule and can span from the morning into the early afternoon.
We slept late, rummaged through the refrigerator, and decided that this rainy saturday morning called for an egg sandwich and some fruit. I made a mushroom leek, and clover sprout omelet, folded into a grilled baguette and a strawberry plum parfait with greek yogurt and a little bit of granola - perfect start to a weekend with no plans.
