Apple Oatmeal with Cardamom Yogurt

Apple Oatmeal with Cardamom Yogurt
serves 2

1 cup quick oats
2 cups water
1 cup greek yogurt
2 apples, peeled & cut into chunks
1 1/2 tsp cinnamon
2 tsp brown sugar
1 tsp cardamom

Cook oats.  To make the apple topping- peel & cut apples, set aside 4-5 chunks to top each bowl of oatmeal.  Place in a microwave safe container with the cinnamon & brown sugar, microwave for 2 minutes-stir and microwave for 2 more minutes.  The apples should be soft.  For the yogurt- mix in the tsp of Cardamom. 

To assemble-separate oats into two bowls, top first with the greek yogurt mix, add the cooked apples on top, and finish with the few pieces of uncooked apple.
