Strawberry Basil + Ricotta Breakfast Tartine

I'm slowly returning to a normal pace after our four day weekend. The highlight being when we found this beauty that happily be shooting on now. Robert is in Montana this week (so, so jealous) and I'm working my way through a little backlog of some recent recipes we did.

Ricotta on toast may sound a little strange for breakfast, but believe me when I tell you, it is definitely worth trying while we've still got some fresh berries in season. I am always up for toast at breakfast but the simple addition of some fresh whipped ricotta elevates the whole idea. For looking so decadent it's really low maintenance, I think this took us 5 minutes to put together from start to finish. Strawberry Basil + Ricotta Breakfast Tartine
2 thick slices  multigrain bread
1/2 cup fresh ricotta
1 tsp honey
6 oz strawberries, washed and sliced
4 leaves basil, cut into chiffonade 

Toast slices of bread until crispy. Meanwhile, in a small bowl, whisk honey into ricotta until combined and mixture is light and airy. Divide ricotta between warm toast slices and top with strawberries and basil.
