Blackberry Chia Breakfast Bowl

For the Free People blog this month we've been focusing on healthy and energizing recipes. There's something incredibly refreshing about this breakfast bowl. When we made it I wasn't sure I would be sold on the texture that comes along with chia but I ended up being pleasantly surprised. 

We got a big jar of bee pollen a while ago, and I started putting it on my yogurt, smoothies, and even toast. It's a nice little addition on top of the greek yogurt here, and if you've never tried it- a little bit goes a long way. I've found that any more than a sprinkle can overpower the rest of the flavors. The chia is chilled overnight with mashed banana, giving it that porridge consistency. Porridge doesn't sound too appealing in the summertime, but this is definitely one that you'd want during warmer weather. If you don't have blackberries, top with any fresh berries you have on hand. 


Blackberry Chia Breakfast Bowl
 
4 tbs chia seeds
1 cup almond milk (can use any dairy non-dairy milk)
1 medium banana, halved and divided
6 oz fresh blackberries
1/4 cup greek yogurt
1/2 tsp honey
1 tsp bee pollen
 
In a small bowl, mash half of banana. In a separate small bowl, mash 3 oz blackberries with a fork. Combine bananas, blackberries, chia seeds, and milk. Stir thoroughly to combine and refrigerate, at least an hour to overnight.
 
To serve, spoon chia seed mixture into a bowl. Mix greek yogurt with honey and spoon in a dollop atop the chia seeds. slice remaining banana and place atop bowl. Add blackberries, sprinkle with bee pollen and serve.
