Sweet Farro with Blackberries + Bananas

It started to feel like Spring this weekend, and today I was all about our breakfast looking like it.  We didn't even mind losing an hour of sleep now that we'll have some gorgeous light in here for an extra hour.  

Since I was feeling particularly excited for a change in weather, I thought farro would be a nice change from our oatmeal routine.  This is a really good hot cereal base for any fruit or nut topping, so if you don't have bananas or blackberries just substitute whatever you have on hand. 

Sweet Farro with Blackberries + Bananas
1 cup farro
5 cups water
2 tablespoons brown sugar
1/4 teaspoon salt
1/4 cup walnuts, chopped and toasted
1-2 bananas, sliced
1 cup blackberries
Honey, for topping
Skim milk, for topping

Bring water and salt to a boil.  Once boiling, stir in farro and reduce heat to low.  Simmer for 40 minutes, stirring frequently until the farro is tender.  Drain any excess water and stir in the brown sugar.  Serve warm topped with toasted walnuts, bananas, blackberries, honey and skim milk.
