I imagine you're winding down from Christmas festivities at this point, and the thought of making anything too complicated for breakfast is far from your mind.

Since cereal and granola are staples in most kitchens for breakfast, I think this is worth trying out. We've made Walnut Granola recently with poached pears, and wanted to do something a little more wintery this time. The texture of this is much more flaky, like a cereal, and I've been having it with milk since we made it. Since the holidays are over you probably aren't in need of any gift giving ideas, but we ended up putting the extra in jars and gave them away. Something to think about if you're ever in need of an edible gift that's easy to make. 

Winter Fig + Vanilla Spiced Cereal
makes about 4 cups

2.5 cups rolled oats
1.5 cups walnuts, roughly chopped
1/2 cups almonds, roughly chopped
1 cup dried figs, roughly choppeed
1 cup flaxseed
1/4 cup light brown sugar
2 tsp cinnamon
1 tsp nutmeg
1 tbs vanilla 
1/2 tsp salt
6 tbs applesauce
3 tbs brown rice syrup
3 tbs honey
2 tbs walnut oil

Preheat oven to 300°. In a small saucepan over low heat, combine applesauce, brown rice syrup, honey, walnut oil, and vanilla. Gently warm for 5 minutes. Meanwhile, in a large mixing bowl, combine oats, almonds, walnuts, brown sugar, cinnamon, flaxseed, and salt. Pour contents of saucepan into dry mixture and fold to combine thoroughly. Transfer mixture to a well oiled baking sheet or jelly roll pan, spreading evenly to cover surface. Bake for approximately 40 minutes, and stirring every 10. Add dried figs and bake an additional 10 minutes. Remove from oven and let cool completely before storing.
