Skillet Roasted Cranberry Pears

This was certainly a winter inspired dish.  Lately I've been going a little cranberry crazy, buying two bags at a time and trying to see what I can come up with.  This was the result of an excess of pears in our kitchen, and a serious need for something sweet.

Skillet Roasted Cranberry Pears

Fresh cranberries

2 pears, halved and cored

1  and 1/4 tbsp butter

1/2 tsp cardamom

1 tsp cinnamon

1/2 tsp nutmeg

Melt 1/4 tbsp of butter in a 12 inch cast iron skillet on medium-low heat.  Add fresh cranberries, enough to coat the whole pan.  Sprinkle cardamom across the cranberries, stirring until evenly spread.  Let cranberries cook until they soften and begin to pop.  

Place pear slices on top, bottom side down and cut 1 tbsp butter into 4 pieces, placing on top of each slice.  Sprinkle with the cinnamon and nutmeg.  Bake at 375° for about 15 minutes, until pears soften and the mixture is crackling.  Serve warm.
