I'm certain that I'm not alone, admitting my love for chocolate gets crazier than usual in December.  I was flipping through our million food magazines that are full of chocolatey holiday recipes, reminding me that one of my absolute favorite things in the whole world is chocolate chip pancakes (particularly at 24 hour diners, sometime around midnight).   After a busy week for the both of us it was nice to just sit and enjoy something as simple and easy as that.

We discovered the magic of adding greek yogurt to pancake batter, making them a lot healthier, a little bit tangy, and extra delicious.   



Simple Chocolate Chip Pancakes

1 1/2 cups plain non-fat greek yogurt

2 eggs

1 teaspoon vanilla

1/3 cup water

1 cup flour

1 tablespoon sugar

2 teaspoons baking soda

1/2 cup chocolate chips

In a large bowl mix greek yogurt, eggs, vanilla, water and set aside.  In a separate bowl mix flour, baking soda and sugar, then add to the yogurt mixture.  Stir until just combined, adding in chocolate chips last.  Coat a non-stick pan or griddle with cooking spray over medium heat.  Once the pan is hot, pour batter in 1/3 cup amounts.  Once bubbles start to form and the edges are getting firm flip the pancake over.  Serve warm with maple syrup or powdered sugar.
